What is Xylitol?
Xylitol is a natural sweetener derived from the fibrous parts of plants. Similar in taste to regular sugar, but with a significant difference - Xylitol has a low glycemic index and is low in calories. Additionally, Xylitol has a natural, cooling and moisturizing effect. The Xylitol molecule contain only 5 carbon atoms rather than the 6 of most other sugars. This molecular difference is the key to Xylitol's beneficial qualities.
When carbohydrate or sugars are consumed acid is produced in the mouth and the pH drops rapidly below pH 5.7, causing demineralization of tooth enamel and potential cavities. Since Xylitol is a five-carbon polyol, oral bacteria do not metabolize it and therefore no acid is produced. When Xylitol products are used the pH balance in the oral cavity is quickly returned to a safe level above pH 5.7, minimizing the erosion of enamel and enhancing the remineralization process. The pleasant sweetness also stimulates saliva flow, which helps to rinse away excess sugar residues and neutralize any acids that have been formed.

Usage
When cooking, replace sugar with XyloSweet in equal measures. XyloSweet is heat-stable for cooking and baking, it also mixes and dissolves just like normal sugar.*
*XyloSweet will not cause breads and pastries to rise as yeast cannot consume it. XyloSweet is not a good choice for hard candies since it will not crystallize when heated. Xylitol requires a brief periods of tolerance adjustment. It is suggested that XyloSweet be used in gradually increasing portions over a period of 3 - 6 weeks before it is entirely substituted for common sugar. Xylitol is not recommend for sweetening juices and instant beverages that require a large amount of sweetener. XyloSweet can have a laxative effect when first being used if used in large doses.
